So cooking for one is hard - Most recipes are for 4+ people and you can only have leftovers so many days in a row before you start running out of recipes that you haven't run in to the ground - BUT I found one that is super easy and I have yet to get tired of: Crockpot Chicken Enchilada Soup!
Serves: 2 people
Cook Time: 6+ Hours
Combine the ingredients in a crockpot and cook for 6 - 7 hours on low. Remove and shred the chicken and add back to the crockpot.
Serve with cheese, tortilla chips, sour cream or any other favorite toppings!
Ingredients:
2 chicken breasts
1 10oz can Red Enchilada Sauce
1 14oz can Black Beans
(drained & rinsed)
1 14oz can Corn
(drained)
1 4oz can Diced Green Chilies
1 14oz can Diced Tomatoes
(with juice)
1 14oz can Chicken Stock
1 tbs Minced Garlic
1 tbs Salt
