After-School Cookies


While some people may refer to these cookies as "no bakes", these will forever and always be called After-School Cookies in my house. My Grandma Bobbie has always made these cookies and they are hands-down my favorite cookies. They are addictive and delicious and I finally figured out how to make them!

Ingredients:

1/2 cup butter, cut into pieces - Set out 30 minutes prior to cooking to soften

1/2 cup milk - Set out 30 minutes prior to cooking

2 cups granulated sugar - Combine with the cocoa powder and whisk together to break up clumps

1/4 cup unsweetened cocoa powder - Combine with sugar: see above

1/2 cup creamy peanut butter

1 teaspoon vanilla extract

3 cups quick-cooking oats

Directions:

1. Before getting started, prepare and measure out all of your ingredients. Line two large baking sheets with parchment paper and set aside.

2. Melt the butter entirely, then slowly mix in the milk. Add in the sugar and cocoa powder and mix together over medium heat. Make sure to stir often everything is well combined. Bring the mixture to a rolling boil and allow to boil for 60 seconds (make sure to set a timer!) stirring occasionally.

3. Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything is well combined.

4. Drop spoonfuls of the mixture onto the prepared baking sheets. Allow to cool for 20-30 minutes, serve, and enjoy!
