Tequila Lime Chicken Nachos


So one of my life long dreams is to find the world's best nachos (I know, aim high, right?) and despite the fact they all for the most part have the same ingredients, it's easy to make average nachos. But these are not average nachos - This yummy tequila lime chicken is a delicious!

Tequila Lime Chicken:

  • 3 boneless skinless chicken breasts (I cut them in half to help cook faster and more evenly)

  • 1 - 1 ounce packet taco seasoning: I used Old El Paso Taco Seasoning

  • 1 tablespoon olive oil

  • 1 tablespoon tequila

  • 1 tablespoon lime juice

  1. In a large skillet, heat your oil over medium/high heat.

  2. Add the chicken into the skillet and toss in the tequila, taco seasoning, and lime juice, Stir to combine. Cook the chicken until fully cooked which takes about 4-5 minutes.

  3. Cut up to put on the nachos.

Nachos:

  • Bag of Tortilla Chips - The thicker the chips, the less likely they will get soggy when you add your toppings.

  • 3 cups shredded Mexican blend cheese - You can't go skimpy on the cheese

Optional (but suggested - go big or go home!)

  • Pico de gallo

  • Fresh chopped cilantro

  • Refried Beans

  • Jalapeños

  • Sour Cream

  • Guacamole

  • Salsa - Goes GREAT with my Roasted Tomatillo Avocado Salsa - Recipe Here

  1. Preheat your oven to 350F

  2. In a large skillet, heat your oil over medium/high heat

  3. Create a thick layer of chips on a large sheet pan/cookie.

  4. Top with chicken, beans, cheese and pico de gallo (the pico tastes even better cooked in). Don't go light with the cheese!

  5. Bake for approximately 10 to 15 minutes so that the cheese fully melts and even starts to brown a little.

  6. Remove from the oven and top with all your favorite sour cream, salsa, guacamole, etc.
