Spinach & Artichoke Pesto Pizza
So not only is this recipe completely outside my box because I came up with it as I was wandering through Trader Joe's, but it also has spinach and artichokes on it - and it's not in a dip! This could very easily be my new favorite pizza and it was pretty easy to make, too!
I got everything from Trader Joe's which meant that it was super quick, fresh & easy!

Ingredients
4 oz of fresh spinach
1 Tbsp butter
1 clove garlic, smashed and minced
1/4 cup heavy cream
1/4 cup freshly grated parmesan cheese
1/8-1/4 tsp salt, to taste
Pizza Dough (I got the "Plain" Trader Joe's pre-made dough)
2 oz mozzarella cheese, grated
1/4 cup of Artichokes (I got the marinated artichokes & they were delicious!)
1-2 tsp pesto
a pinch of red pepper flakes (or more than a pinch if you like spice!)
Instructions
Pre-heat oven to 450 degrees F. (this is according to the Pizza Dough bag - check your dough for cooking instructions).
Chop spinach and mince garlic.
Heat a deep pan to medium-high heat with butter.
Add garlic and spinach and sauté until wilted.
Add heavy cream, parmesan, and salt and reduce heat to simmer, stirring frequently to thicken for about 5 minutes. Remove from heat and allow to cool slightly.
Spread spinach mixture onto your dough and top with pesto, mozzarella cheese, & red pepper flakes.
Bake for 10 - 12 minutes depending on the pizza dough.
